Every once in a while I go off topic and share a bit of my passion for cooking. This holiday season I had one of those experimental moments.
I came up with this wonderful broccoli salad.
It is so…. good I thought I would share it with you. This is a crunch and munch recipe, so don’t cut your pieces too small. The more you chew the more calories you burn. 🙂
The ingredients are as follows-
i large head of broccoli, cut in bite size pieces
2 cups of chopped celery
2 cups of slices apples ( Granny Smith, or Pipin)
1 cup ( or more) of coarsely chopped walnuts
1 cup of dried cranberries
3/4 cup of mayonaise
2 Tablespoons of lemon juice
2 tablespoons of sugar ( or more )
a dash of lemon pepper
1/2 tsp of nutmeg
1 tsp cinnamon
Cut up broccoli, celery and apples ( I used Granny Smith) into bite size slices. Coarsely chop nuts. Cover cranberries with warm water and let stand to soften a bit. Drain and add to other ingredients.
Dressing- combine mayonaise, lemon juice, sugar, pepper, nutmeg and cinnamon. Toss with salad ingredients.
Everyone that has tasted it thinks its great. I keeps well in the frig. I like to eat it as a snack during the day.
